1/2 Lb of Soprano.  Our take on the classic Pecorino Romano is more of a table snacking cheese then the hard, salty Italian version.   Rubbed in Olive oil for rind and moisture management, Soprano delivers all the flavor and aroma you expect from sheep milk. 

1/2 Lb of Powahatan. Named after a NJ native tribe, this 11 month old raw cow milk cheese evelops an aray for flavors including spice, caramel and earth tones from cave aging.
